Figuring out what you can eat that tastes good to improve your health with an autoimmune disease can be a daunting task. Even once you have the list in hand, hunting those foods down and then figuring out what to cook is stressful to say the least. To give you some ideas and hopefully make things a bit easier, I've been posting about what I've been eating!
This is my 9th week on the anti-inflammatory AIP diet. For the last 55 days, I have avoided all foods that cause autoimmune flairs. In an attempt to share what I've eaten and how I'm doing with the dietary changes, I've provided links and recipes along with my progress for you to check out how it works for me!
Day 56
How I am feeling: Today I'm feeling pretty good. I did a new high impact cardio exercise video. My hair has started falling out in pretty significant handfuls. This is new.
What I ate on AIP elimination phase day 56:
Breakfast:
Cinnamon and Raisin Porridge from The Healing Kitchen

Snack:
Snack Mix: Love Bird Cereal, Coconut, Tiger nuts, dried apples, cranberries
Dinner:

Gratitude: Today, I’m thankful for rest after a long day.
Day 57
How I am feeling: I'm still feeling better with less pain. Today was high impact cardio.
What I ate on AIP elimination phase day 57:
Breakfast:
Lime Pork and Sweet Potato Hash
1 lb ground pork
1 medium sweet potato, shredded
½ red onion, diced
1 tsp sage
2 tsp oregano
1 tsp garlic powder
¼ tsp dried lime
1 T avocado oil
Brown pork. Add onion and potatoes. Cook until onions are translucent. Add spices and mix throughout.
Serves 4

Day 58
How I am feeling: Still having less pain. Today was minimal cues yoga. The swelling in my lymph node behind my ear seems to be going down slightly.

Gratitude: Today, I’m thankful for the burst of warm weather.
Day 59
How I am feeling: I did high impact cardio today. I’m feeling pretty good. The pain is mostly gone from thumbs, wrists, and elbows. My neck has been loosened up for a little while and the lymph node is just a small bump.

Day 60
How I am feeling: Feeling well. Today was high impact cardio.

Breakfast:
Easy Paleo and AIP Waffles from Sonora in Bold
Maple syrup
Strawberries
Protein Drink
Lunch:

I made the bed and opened the curtains. Cleaned the bedroom and bathroom. Cleaned up the garden for the winter in the sunshine. Worked on homemade Christmas gifts. Relaxation practice.

Today, I’m thankful for the warm sun on my face.
Day 61
How I am feeling: I'm doing well.

Breakfast:
LoveBird Cereal with cranberries, raisins, freeze dried peaches, protein powder, coconut milk
Lunch:

Today, I’m thankful for well-known friends to share life with.
Day 62
How I am feeling: I had a bit of a stomachache when I woke up. My hair falling out in bunches today. I did high impact cardio today.
