Chocolate Dipped Strawberry Popsicles are a wonderful summer treat and really easy!
Take a pound of strawberries and hull them.
Add strawberries and 1/3 cup water to a blender and blend until most of those strawberry chunks are gone. Pour into popsicle molds and freeze over night.
Mix together 1 cup of semi-sweet chocolate with 2 T. oil. Melt in microwave. Stirring every 15 seconds. Dip frozen popsicles into it. Have a helper hold the popsicles until the shell hardens (about 20 seconds). You can either eat right then. Or set on foil or wax paper to keep hard.
We took ours on a camping trip, so we put them in the freezer for about 30 minutes. Then into a plastic bag.
Every single kiddo that ate one of these LOVED them!
