When you homeschool, there is no one to prepare the kids meals for them (or yours) while you are teaching. (Okay…so sometimes extended family can help and older kids, but not at our house.) So I am always looking for filling, delicious lunch ideas that don’t require a lot of time and don’t require microwaving.
I use homemade rolls, pitas, tortillas, dough, and breads. A lot of times, I will make a large batch of tortillas and freeze them so they are ready to grab as needed. Generally, working on the weekend I can put up a lot of things in the freezer and then bring them out the night before and with little effort have a great lunch.
Wednesday night is our soup and bread night for dinner. When we’ve had our fill, I put the pot in the refrigerator and pull it out on Friday to simmer while we are working.
Here is a menu plan for 4 weeks. I always offer fruit and veggies on the side as well.
Week 1
Cheese quesadillas with sour cream and salsa
Garlic cheese bread with marinara dipping sauce-pizza dough spread with minced garlic and butter, top with parmesan and mozzarella
Sliders
Leftovers spread in the bottom of a baking dish topped with biscuit mix
Soup
Week 2
Wraps with leftover shredded meat and veggies
Mini-pizzas usually with a pizza dough, but sometime on tortillas
Pitas stuffed with peppers, dressing, chicken, black beans, tuna, pepperoni, and/or veggies
Baked fritta using leftovers and about 6 eggs

Week 3
Beef and Bean (or just bean) burritos
Pizza rolls: bread dough stuffed with pepperoni and cheese dipped in spaghetti sauce
Sandwich: peanut butter and jelly, meatloaf, egg salad, tuna, chicken
Momos with leftover meat and cheese
Soup
Week 4
Tacos with leftover beans and veggies
Pizza pinwheels-rolled up pizza, cut into pinwheels, and bake
Ham or sausage biscuits-leftover cooked meat mixed into biscuit mix and baked
Mom-ables: any combination of cracker, meat, and cheeses; even peanut butter crackers are a hit
